We’ve finished pressing! The plan had been to press yesterday and again Friday morning to finish, but we made a very early start yesterday, all was going smoothly, so we pushed on and finished yesterday evening. It is good to be done! Although the wines are far from finished, this point marks the end of the heavy lifting and the end of the point where the wines need daily attention in the winery. This is because we have now separated the wine from the marc (the skins and pips you see in the picture above). We are making about 40,000 litres of wine this year and that produces about seven tonnes of marc which we take to the distillery for them to extract more alcohol from it.
In the winery now the focus turns to the malolactic fermentations, but that’s for the next post……
